The Redneck Omelet

This morning, I had my first redneck omelette. (Actually, Americans spell it omelet but I can't bring myself to). It was courtesy of Ray's Diner in Elkton, Virginia which might have had a few tongues in cheeks, though there were some pickup trucks outside and chaps in baseball caps sitting at the counter. The choice was between a redneck omelette or a hillbilly omelette. The former contained, in no particular order, ham, bacon, sausage, mushrooms, peppers, onions. Oh yes and eggs.  And it came with a biscuit - an American biscuit, that is, which is nothing like a British biscuit - rather more like a big, soft scone. I feel rather embarrassed to keep talking about breakfast but this one was rather good.
